Simple Sweetcorn Soup

Ingredients
1 tsp oil
1 onion, chopped
1lb sliced potatoes
1 large can sweetcorn
4 cups of vegetable stock
Salt and pepper to season
Method
Lightly fry the onions for around 3 minutes, until the onion is soft and clear - not browning.
Add everything else.
Bring to the boil, and then simmer for 30 minutes until the potato is cooked.
