Black-eyed Beans with Curry Dressing

Ingredients
8oz black-eyed beans, soaked overnight
Salt and pepper to taste
1 onion, thinly sliced
1 green pepper, seeded and finely chopped
Juice of half a lemon
2 tblsp cashew nuts
Dressing
2/3 cup natural yoghurt
2 tsp curry powder
2 tblsp pineapple juice
1 garlic clove, crushed
Method
Simmer the beans in salted water until tender, check the packet for times, and then drain well.
Mix the black-eye beans with the onion and green pepper. Stir in the lemon juice, salt and pepper to taste and cashew nuts.
For the dressing .. mix all the ingredients together, season with salt and pepper to taste
