Braised Cauliflower with Chilli

Ingredients
4 tbsp olive oil
1 inch fresh root ginger, peeled and chopped
1 cauliflower, cut into small florets
2-3 green or red chillies, seeded and sliced into quarters
3 green onions
Salt to taste
1 tsp sugar
1.25 cups vegetable soup
1.5 tsp cornstarch
1.5 tbsp water
Method
Heat the oil in your wok, or large frying pan.
Fry the ginger lightly for 1 minutes.
Reduce the heat and add the cauliflower florets and chillies. Stir-fry for 3-4 minutes.
Add the green onions, season with a little salt and sprinkle over the sugar. Mix for 1 minute to coat well and then add the vegetable soup (a vegetable broth/thick soup is best).
Cover and cook for two minutes.
Blend the cornstarch with a little water, and add to the pan, stir over the heat until the sauce has thickened. |
