Spinach & Ricotta in Filo parcels

Ingredients
300g spinach
1 large onion sliced
Little butter or margarine
1 garlic clove, crushed
250g ricotta cheese
zest of 1 lemon
3 tbsp parmesan equivalent
6 large sheets of filo pastry, cut into large rectangles
Method
Heat the oven to 200C
Chop the spinach and cook the onion in the butter or marg, just a knobs worth, with the crushed garlic until just softened.
Add the spinach to the onion and cook for a few minutes. Leave to cool.
Mix the lemon zest, ricotta and parmesan equivalent, then stir in the onion and spinach season with a little salt and pepper.
Melt a little butter/marg and brush a pastry rectangle with the butter, cover with another rectangle and brush again.
Put 1 tbsp of filling in a corner, fold into a triangle, and then fold again twice.
Brush again.
Repeat to make the 12.
Bake for 15-20 minutes.
