Sweet and Sour Cabbage

Ingredients

1/2 lb white cabbage, shredded
1/2 tsp baking soda
1 tsp salt
2 tsp sugar
1 tbsp oil

For the sauce
2.5 tbsp sugar
2.5 tbsp white wine vinegar
1 cup vegetable stock
pinch salt
1.25 tbsp cornflour
1 tsp ketchup
drop of red food colouring

Method

Boil the cabbage with the baking soda, salt and sugar for 2-3 minutes. Drain well and discard the water. Run the cabbage under cold water for a few minutes to stop it cooking. Drain and put to one side.

Heat the wok or large frying pan, add the oil then add the cabbage and fry until it is heated through. Remove to the swerving dish.

Add the well-stirred sauce ingredients to the wok and gently bring to the boil stirring all the while. Stir over the heat until the sauce thickens.

Pour over the cabbage and serve immediately.

Hints

Sauce needed a little longer to cook out, and quite a bit more vegetable stock.
