Ingredients
75g self raising flour
75g butter
75g sugar
75g rolled oats (porridge oats)
1 tablespoon golden syrup
1 tablespoon milk
Method
Preheat oven to 180c
Sieve the flour into a bowl, mix in the sugar and oats well.
Melt the butter, syrup and milk in a pan and mix well.
Fold in the dry ingredients and mix thoroughly.
Then form into small balls and flatten into rounds and place on a baking tray lined with greaseproof paper. Allow plenty of space around each biscuit, mine expanded across the tray by a little over 100%.
Bake for 12-15 minutes, reduce that a little for a fan assisted oven. I went for about 16 minutes, colour was right but they were a little hard, softer would have been better.
Hints
If they are a little overdone, you could try leaving them in the fridge uncovered for an hour or two, they will pick up a little moisture from the fridge, and it should be fairly uniform.
I plan on trying the recipe again but with maybe a little less sugar, and replacing that with a tablespoon or two of honey. A hint of honey would have been nice and the sugar content is a bit lairy.
Update, my kids have now made these eight times under their own steam and they've fortunately replaced rice crispie cakes as first choice recipe. |
