Cat's tongues biscuits.

Ingredients
110g softened butter
100g caster sugar
10g icing sugar
100g cake flour
3 egg whites
0.5 teaspoon vanilla essence
Method
Pre heat the oven to 150°C / 300°F / Gas mk 2.
Gently whisk the softened butter and both of the sugars together until light in colour and texture. Add the rest of the ingredients and again whisk until almost fluffy but don't over beat.
Spoon tablespoonfuls onto a baking tray, leaving plenty of space between them. Try and pour out in a finger shape, rather than a round.
Place in the oven for about 12 minutes checking for colour. They should be darker around the edge and a light golden colour in the centre.
Remove from the oven and carefully transfer to a cooling rack to cool.
You should have about 40 biscuits. Store in an airtight container.smrtovnice
