Broccoli and Almond Risotto

Broccoli and Almond Risotto

Ingredients

1 medium onion, finely chopped
2 tbsp olive oil
0.75 cup brown or wild rice
3 cups vegetable stock
Salt and pepper to taste
2 tbpsn chopped, toasted almonds
1 lb broccoli, cut into florets
0.25 cup grated hard cheese *

A few lightly toasted almond flakes for garnish

Method

Fry the onion gently in the olive oil for about 3 minutes. Add the rice and stir over the heat for 1 minute, until the rice is evenly coated with oil.

Gradually stir in the vegetable stock. Bring to the boil and add the salt and pepper to taste. Add the chopped almonds, cover and simmer for 20 minutes.

Add the florets of broccoli, cover and simmer for another 8 minutes, until all the stock has been absorbed.

Stir in the cheese and spoon into your serving dish, sprinkle the toasted almond flakes reserved for the garnish and serve hot.

Hints

* Would normally be parmesan, but parmesan is not vegetarian at all.
