Chip Shop Curry Sauce
Replicating the medium-hot Chinese Curry Sauce that is available from Chinese Take-away Restaurants and Chip Shops up and down the country.

Pinch of garlic powder
1/4 tsp sugar
2 tbs plain flour
2 tsp hot madras curry powder
1 tsp sweet paprika
1/4 tsp chilli powder
1/2 tsp salt
2 tbs veg oil
2-3 cloves garlic, finely chopped
1 x 2.5cm/1' ginger, finely chopped
Stir fry the garlic and ginger for 2-3 mins.
Mix all the dry stuffs in a bowl, add to the pan, leave for 30 seconds or so, then stir fry for 30 secs, it will become dry. Add water bit at a time til thin sauce, bring to boil and simmer for 1-2 minutes.
