Excellent veggie egg noodles for to accompany a wide selection of vegetarian dishes and recipes.
2 cups all-purpose flour
3 egg yolks
1 teaspoon salt
1/4 cup water
Put the flour into a mixing bowl and add the egg yolks and salt.
Add the water; 2 tablespoons at a time until dough is stiff and easy to roll.
Divide the dough into 3 or 4 pieces and roll 1 piece at a time until it is the right thickness.
You can cut the piece of rolled dough into 4 pieces and roll up and cut with a knife the width you want.
After cutting, put on a floured board and let dry for a while. Once dried, they are ready to cook.
Boil in a vegetable broth.
Some of the dough may be frozen for later use. It takes about 20 minutes to cook a batch of noodles.
