Another avocado dressing that offers veggies a decent alternative to the ever present guacamole.
Ingredients
32 ounces refried beans
4 ounces green chiles, chopped and drained
1 envelope taco seasoning mix
2 ripe avocados, peeled and pitted
2 tablespoons lemon juice
16 ounces taco sauce
1 1/2 cups sour cream
3 cups lettuce, shredded
6 ounces cheddar cheese, grated
black olives, sliced
tortilla chips
Method
In a medium bowl, mix together the refried beans, green chilies and taco seasoning mix.
Spread on a 12-inch round serving platter. Blend the avocados, lemon juice and 1/2 cup taco sauce until smooth.
Spread the sour cream on top of the avocado mixture.
Top with the shredded lettuce, cheese, taco sauce and olive slices.

The avocado is very popular in vegetarian cuisine, making an excellent substitute for meats in sandwiches and salads because of its high fat content. The fruit is not sweet, but fatty, strongly flavored, and of smooth, almost creamy texture.
