A suitable veggie gravy that goes with almost any dish where you would want gravy.
1 tblsp margarine
10 oz mushrooms, cleaned and sliced
2 tblsp flour
1 cup vegetable stock
salt and freshly ground pepper to taste
Heat the margarine in a medium saucepan. Add the mushrooms and cook, covered, until they are done to your liking.
Dissolve the flour in enough cold water to make a smooth paste. Add it to the saucepan along with the vegetable stock and whisk together.
Bring to a simmer, and cook gently until the mixture has thickened.
Season with salt and pepper, and serve.
Good on pulses, veggie burgers, green vegetables, or mashed potatoes.
