Perfect hard boiled eggs! No dark grey around the yolk, no rubbery textture. Perfect every time. How long do you boil an egg when you want it hard boiled .. 10 minutes, 5 minutes or not at all?

Method
There is a little known fact about hard boiled eggs, if you actually boil eggs; they have a habit of becoming rubbery, and getting the less than pretty grey surface around the yolk.
So this method is well worth trying.
Eggs should only ever be in single layer in the pan, any second tier just cannot cook properly.
They should be covered by at least 1 inch of COLD water, over the top of the eggs.
Cover the pan with lid and bring to a boil over a medium heat.
As soon as the water boils the water comes to a full boil, remove from heat and leave to stand in the hot water for 15 to 18 minutes, depending on the size of the eggs.
Drain off hot water and cover with cold water for a few minutes, five or so. Shell the eggs, immerse in cold water again for a minute or so. Use as required or desired.
