Rice Fritters

Servings : 3-4 
Preparation Time : 10 mins, Cooking: 40mins 
Difficulty : Moderate 

A fairly simple, not exactly healthy, and thoroughly rewarding to the taste buds, vegetarian rice fritter recipe.


6 oz. of rice
1 pt of milk
8 oz. of sugar
1 oz. of fresh butter
6 oz. of marmalade, or apricot jam
3 eggs

For the Batter
4 oz. of plain flour
1/2 pt milk
1 egg
Pinch of salt


Let the rice swell in the milk with the butter and the sugar over a low heat until it is tender. This will take about 1/2 an hour.

When the rice is done, strain off any milk there may be left. Mix in the apricot marmalade and the beaten eggs, stir it well over the heat until the eggs are set

Then spread the mixture on a dish, about 1/2 an inch (1.5 cm) thick.

For the batter:
Measure the milk into a jug, then add the egg and whisk together. Add the salt, then gradually sift the flour into the mixture, whisking after each bit. When all the flour is added, whisk until the batter is smooth.

When it is quite cold, cut it in long strips, dip them in the batter, and fry them a nice brown.

Sprinkle sifted sugar over them, and serve.
