Spinach Bake

Super simple spinach bake, mix everything and bake for 20-25 minutes. A very healthy vegetable dish.

Ingredients

8 ounces spinach, frozen
1 cup cooked rice
1 cup cheddar cheese, grated
1/3 cup milk
2 egg, beaten
2 tablespoons butter or margarine, melted and cooled
2 teaspoons chopped onion
1/2 teaspoon soy sauce

Method

It could not be any simpler to make.

Grease a dish and then combine all the ingredients and pour into the dish.

Bake at 350 F. for 20 to 25 minutes.

Hints

Many of the tales about spinach have turned out to be just folklore tales. It is high in iron, but not fantastically so, and it is high in calcium, but a harder version for the body to absorb than say in brocoli.

Spinach still has a large nutritional value, especially when fresh, steamed, or quickly boiled. It is a rich source of vitamins A, C, E and K, magnesium, and vital antioxidants.

It is a genuine source of folic acid, and this vitamin was first purified from spinach.

To benefit from the folate in spinach, it is better to steam it than to boil it. Boiling spinach for four minutes can halve the level of folate.
