A vegetarian slant on a popular cornbread recipe. No tasty nibbles of bacon in this one though.
1 cup flour
1/4 cup sugar
4 teaspoons baking powder
3/4 teaspoon salt
1 cup cornmeal
1 cup milk
1/4 cup shortening
Sift the flour with the sugar, baking powder & salt.
Stir in the cornmeal, then add the eggs, milk, and shortening.
Beat until smooth.
Bake in greased pan at 425F for 20 - 25 minutes.
