Moroccan Style Vegetarian Couscous

Straight forward vegetarian couscous recipe with a taste of northern Africa to it. Super quick and great with salads and more.
1 cup orange or other juice
1 cup instant couscous
1/4 cup dates, finely chopped
1/4 cup raisins
1/4 cup sliced almonds
1 tsp cinnamon
In one pan bring the juice and roughly 1/2 a cup of water to the boil. Once it reaches the boil remove from the heat.
Stir in couscous and allow to sit covered with a lid or saucer for 5 minutes.
In a separate pan, saute the dates, raisins, almonds and cinnamon in around 1/2 a cup of water for 2 minutes.
Add cooked couscous. Mix well and serve warm.
Goes well with salads and variety of other dishes.
