Good crumble recipe that can be adapted to suit other fillings and toppings. You can substitute the plums for almost any fruit; rhubarb, apple, gooseberries, blackberries etc. You can also substitute the rolled oats with muesli to produce a much crunchier crumble topping.
Ingredients
500g fresh plums, stoned and cut in quarters
100g plain flour
75g butter or marg
75g Demerara sugar
75g rolled (porridge) oats
1 tsp mixed spice
Method
Preheat the oven to 200c
Arrange the plums across the bottom of an ovenproof dish
Rub the flour and butter together with your fingertips, until it resembles fine breadcrumbs.
Add the sugar, rolled oats and mixed spice, stir in well. Spoon evenly over the plums, and press down very lightly. The heavier you press down, the heavier the crumble can be, but it does need to be pressed down a little.
Bake in the oven for 30-35 minutes, until the top is golden and the juices are bubbling slightly.
Serve with a little ice-cream or custard or cream or yoghurt as preferred.
