Vegetarian Haggis

We are vegetarian ourselves and were due to entertain some Scottish friends close to Burns night. We started looking for a vegetarian haggis alternative, initially just messing about. It took an age to find, but this is it, and I think worth the search.

Ingredients

2 oz. of Wheatmeal
1 oz. of Rolled Oatmeal
1 egg
1/4 oz. of butter
1/2 gill milk
1 tspn of onion, grated or finely diced
pinch of herbs
pepper and salt to taste.

Method

Beat the butter in a bowl to soften well.

Beat the egg, mix it with the milk, and slowly add the other ingredients. Ensure it is well mixed.

Turn the mixture out into a small greased basin.

Steam the Haggis for 1-1/2 hours over a pan of simmering water.

Serve with vegetables.

Hints

Haggis is traditionally served with 'neeps, tatties and nips' - mashed turnips, mashed potatoes, nips of whiskey.
